The \u201cjima\u201d is the process of harvesting the agave plant, which is carried out by our expert jimadors, who use a sharp tool called \u201ccoa\u201d, with which they strip away the outer leaves and the roots to separate it from the soil and leave exposed the heart of the plant or &quot;pi\u00f1a&quot;, where the greatest amount of sugars is concentrated. This process is carried out in stainless steel stills and consists of two distillation processes. In the first process, the “dead mosto” is heated with steam distilling until it has an intermediate product called “ordinary”, with an alcohol concentration of 20 to 30%. In the second process the “ordinary” is distilled again, enriching the alcohol content up to 55% and purifying the composition of the product. After distillation, the tequila is aged in white oak barrels, which give the final product very particular aroma, color and flavor. The bottling is carried out directly in our facilities in an artisanal way in order to give local labor which also allows us to guarantee that we comply with the highest hygiene and quality standards.<\/p>\n
