PROCESS

AGAVE

Our tequilas are made 100% with blue weber agave of the best quality, which allows us to create tequilas of intense flavor and character.

HARVEST

The “jima” is the process of harvesting the agave plant, which is carried out by our expert jimadors, who use a sharp tool called “coa”, with which they strip away the outer leaves and the roots to separate it from the soil and leave exposed the heart of the plant or "piña", where the greatest amount of sugars is concentrated. These agave piñas are transported from our fields to our distillery.

COOKING

The agave piñas are manually cutted into two or four parts and are placed in steam autoclaves to ensure uniform cooking, which aims to solubilize and hydrolyze the sugars of the agave since the inulin is poorly soluble in water and not fermentable, which can affect the final flavor of the tequila.

MILLING

The cooked agaves are moved to our automated mills where they are crushed to extract the agave juice called mosto that is ready for fermentation.

FERMENTATION

The agave juice or mosto is deposited in open stainless steel vats at controlled temperatures, where it is mixed with the house’s own yeast that converts the sugars into alcohol in a fermentation process that last up to 72 hours.

DESTILLATION

This process is carried out in stainless steel stills and consists of two distillation processes. In the first process, the “dead mosto” is heated with steam distilling until it has an intermediate product called “ordinary”, with an alcohol concentration of 20 to 30%. In the second process the “ordinary” is distilled again, enriching the alcohol content up to 55% and purifying the composition of the product. For bottled tequilas, this liquor is diluted with deionized water until it has an alcohol content of 38 to 42 percent ABV (alcohol by volume).

AGING

After distillation, the tequila is aged in white oak barrels, which give the final product very particular aroma, color and flavor. It is at this step, where we give the “fine touches” that provide the distinctive characteristics and quality to our reposados and añejos tequilas.

BOTTLING

The bottling is carried out directly in our facilities in an artisanal way in order to give local labor which also allows us to guarantee that we comply with the highest hygiene and quality standards.

Each and every one of the bottles we sell have gone through a rigorous visual inspection to determine if there is any type of undesirable particle in the product.
